Gluten- Free Applesauce Pancakes

Ingredients:
- 1 1/2 cup rice flour
- 3 Tbsp cornstarch
- 2 Tbsp potato starch flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 3 Tbsp butter, melted
- 1 cup applesauce
- 1 tsp lemon juice (optional)
- Apple Cider Syrup, topping (see below)
APPLE CIDER SYRUP:
- 1 cup brown sugar
- 2 cups apple cider
- 1 or 2 cinnamon sticks
Directions:

In a separate bowl, mix milk, eggs, butter, applesauce and lemon juice; add to dry ingredients.
Stir to remove the lumps and cook on a griddle as usual.

APPLE CIDER SYRUP:
Make the syrup. Over medium heat in a medium saucepan, combine the cider and brown sugar, then add the cinnamon stick. Bring to a boil, then reduce heat to medium-low and continue simmering, stirring occasionally, for about 30 minutes until the mixture is reduced by about 2/3. Remove from heat and let cool (it will thicken as it cools).
